CORN PEAS SLICES

Today I bring sweet and sour, cheesy grilled bread slices filled with corn, peas, bell pepper and little spices. This crispy and healthy bread slices are perfect for breakfast or as an evening tea-time snack. It is very easy to make and yummy too. Tryout, you will love it.

INGREDIENTS:
8 Bread Slices
¾ Cup Sweet Corn (frozen)
¾ Cup Peas (frozen)
1 Green Bell Pepper /capsicum (chopped)
4 tbsp Bread Crumb
4 tbsp Butter
3 Cheese Cubes (grated)
1 Onion (finely chopped)
2 Tomatoes (pureed)
3-4 Chopped Green Chilies
1 tsp Kashmiri Red Chili Powder
2 tbsp Flour (maida)
1 tbsp Oil
Salt to taste

METHOD:
Heat oil in a pan or wok. Add chopped onion and green bell pepper in it. Sauté for 2 minutes.
Add Tomato puree, salt and kashmiri red chili powder in it. Fold nicely for a minute.
Add sweet corn, peas and chopped green chilies in it. Mix well. Cover and cook for another 10 minutes on medium heat; stir occasionally. Turn off the heat now. Mix flour with this mixture, fold well again.  Set it aside.
Preheat oven to 180 C. Cut each bread slice diagonally. Spread little butter on each bread slice. Again, spread 1 tbsp of corn pea mixture on it.
Sprinkle bread crumb and grated cheese on the top. Arrange bread slices on the baking tray. Grill for 10 minutes. Switch off the heat now. Keep it inside of the oven for another 5 minutes.

Serve immediately with any sauce of your choice.

DEVILISH EGGS

This is a great snack in most of the potluck or dinner party, not only that it is great in anytime. I didn't add much stuff here, I love it very simple, which tastes just amazing! Tryout and enjoy this yummy, simple, toothsome dish....and enjoy!

INGREDIENTS:
2 Hard-Boiled Eggs
1/2 tsp Mustard Sauce
1&1/2 tbsps Mayonnaise
2 Drops of Tabasco Sauce
A pinch of Paprika
A Pinch of Salt
A Pinch of Black Pepper Powder
A Sprig of Coriander Leaves / Cilantro (very finely chopped)

METHOD:
Peel the eggs and slice each egg half, lengthwise. Remove yolks very carefully. Arrange the egg white halves on a serving plate and refrigerate whites.

Mash egg yolks by using a spoon/fork. Add mayonnaise, mustard sauce, tabasco, pepper powder. Season it with salt and pepper powder.

Using a spoon and mash up everything with egg yolk nicely. Refrigerate for 20 minutes.

Spoon egg yolk mixture into egg while halves. Sprinkle with paprika and coriander leave on the top.  Serve immediately.
SERVES: 2

SATTU KA PARATHA



Today, I am going to share a delicious and healthy paratha recipe from our neighbour state, Bihar - the fastest growing state during the 11th plan period. How many of you have had 'Sattu'? Sattu is a high energy giving staple food of Bihar. Actually, the roasted chana dal (Bengal gram) powder is known as 'Sattu' in Bihar. It is very nutritious food with full of fiber. Here, Sattu is the main ingredient to prepare Sattu Ka Paratha. Specially for this stuffing, it gives a very nice taste to the parathas. Tryout, I am sure, will love it.

INGREDIENTS:
2&1/2 Cups Whole Wheat Flour (atta)
1 & 1/4 Cups Bengal Gram Sattu (I used 'Ganesh' brand sattu)
3 Green Chilies (finely chopped)
3 tbsps Finely Chopped Coriander Leaves
1" Ginger Piece (grated)
1&1/2 tbsps Spices, from Kashmiri Red Chilli pickle
1/3 tsp Black Salt (for taste)
1/4 tsp Nigella Seeds (kalonji)
1/4 tsp Carom Seeds (ajwaan)
1/2 tsp Red Chilli Powder
1 tbsp Fresh Lemon Juice
5-6 tbsps Oil For Frying
2 tsps Mustard Oil + 2 tbsps Vegetable Oil
1 tsp Salt

METHOD:
Take a large bowl. Combine whole wheat flour, 2 tbsps vegetable oil and 1/2 tsps salt. Mix nicely. Slowly add water to knead it into a smooth dough. The dough will be same like chapati dough. Cover and keep it aside for 15-20 minutes.

In the mean time, let start to make the stuffing. Take another bowl, combine Bengal gram sattu, green chilies, coriander leaves, nigella seeds, carom seeds, grated ginger, black salt, pickle spice, 2 tsps mustard oil, red chili powder, lemon juice and salt. 

Mix thoroughly. Sprinkle little water on it and mix well. The right mixture should be, if you touch, it must bind the mixture nicely. Sattu mixture is ready to stuff now. Set it aside.

Divide wheat flour dough into 10 equal balls. 

Wrap each ball in wheat flour and flat it to make a round disc of 4" diameter. Add 2 tbsps sattu mixture on the center of that disc. 

Wrap it up from all sides, then close it nicely. Press it lightly by your palm, so that filling should be spread evenly inside the parathas.

Agarin wrap it with little wheat flour and roll out a slightly thick paratha of 7" diameter. Don't give too much pressure while rolling out parathas, otherwise outer layer of the paratha will easilly break and sattu comes out. Follow the same with the remaining balls. Heat greased non-stick tawa / griddle. Place a paratha on heated tawa.

When the lower part of the paratha is cooked, the upper part will look dark. Flip over the other side then.
Spread little oil on both sides of the paratha and fry it for 2-3 minutes, to make paratha soft, crispy. When brown specs appear means the paratha is done!

Serve immediately with spicy pickle or sour curd or aloo-tamatar ka chokha and a glass full lassi. It is very suitable for a weekend breakfast or brunch. Enjoy this Bihari delicacy.

CRISPY POTATO BREAD TOAST

Here is a simple recipe to make crispy potato bread toast. The masala is made from boiled and mashed potatoes, tempered by Indian spices, a delightful recipe for breakfast or kid's lunch box. It is very easy to make, specially if you have leftover dry potato curry or aloo-gobi. I modified little according to my taste. Tryout and enjoy this delicious bread toast on your breakfast palate.

INGREDIENTS:
8 pcs of Brown Bread / Whole Wheat Bread Slices
3 Medium Potatoes (peeled and parboiled)
1/3 Cup Hot & Sweet Tomato Sauce
1 tbsp Roasted Sesame Seeds
3/4 tsp Grated Ginger
1 tsp Finely chopped Green Chillies (according to taste)
1/2 tsp Red Chilli Powder (according to taste)
1 tsp Roasted Cumin Seeds (powdered)
1 tsp Roasted Coriander Seeds (powdered)
1/2 tsp Dried Mango Powder (amchur)
1 tbsp Fresh Lemon Juice
4 tbsps Finely Chopped Coriander Leaves / Cilantro
1/2 tsp Garam Masala
Salt to taste
4 tbsps Butter

METHOD:
In a large bowl, mash potatoes nicely by using your hands.

Add grated ginger, green chillies, red chilli powder, cumin powder, coriander powder, dried mango powder, lemon juice, coriander leaves, garam masala and salt in it.

Mix everything thoroughly. Keep it aside.

Cut each bread slice diagonally and make two equal pieces. Follow the same for rest of the bread slices. Set aside.

Put little tomato sauce on each bread slice and spread it nicely.

Add potato mixture on it and try to spread it out evenly on the bread slices.

Sprinkle little sesame seeds on the top of bread slices.

Now we have to roast all those bread pieces. Heat a non-stick tawa/griddle. Add 1/4 tsp butter on the griddle and immediately place a bread piece on it. Keep potato spread side on the top. Allow it for 2 minutes on medium heat to make roasted crust on that side.

Now add 1/4 tsp butter on the top of potato spread and flip it over gently to roast otherside. Allow it for 2 minutes on medium heat to roast it properly.

Take out from the griddle when they are golden and crispy from both sides.

Serve immediately with chutney or ketchup.

PHULKO LUCHI R ALOO CHORCHORI - PUFFED FRIED INDIAN FLAT BREAD & POTATO DRY CURRY

I have always been a fan of 'Luchi & Aloo Chorchori'. Today I come with this traditional, luscious and mostly cherished Bengali breakfast, "phulko luchi r aloo chorchori". "Luchi" is nothing but a puffed deep fried Indian flat bread made by maida, which is very similar to 'poori'. Luchis goes very well with a very mild spicy dry potato curry, seasoning with nigella seeds, a wonderful combo and great compliments to each other. In our childhood days, it was the staple breakfast on every Sunday morning. This dish is very appropriate for kid's lunch box too. Each and every child loves to eat this yummy dish and enjoys totally. Hope you will tryout this delicious and classic Bengali breakfast and relish it!

INGREDIENTS:
TO MAKE ALOO CHORCHORI:
500 gms Potatoes
1/2 tsp Nigella Seeds/Kalo jeera (kalonji)
A Pinch of Asafoetida
2-3 Green Chillies, Cut into Slits (if dish is only for kids, please omit it)
1/4 tsp Turmeric Powder
A Pinch of Red Chilli Powder (optional)
1/2 tsp Dry Roasted Cumin seeds & Coriander Seeds powder
1 tsp Sugar (optional)
3 tbsps Oil (preferably mustard oil)
Water as Required
Salt to taste

TO MAKE LUCHI:
2&1/2 Cups Maida/Plain Flour
3 tbsps Cooking Oil + Oil for Deep Frying
1/4 tsp Salt
Lukewarm water

METHOD:
HOW TO MAKE ALOO CHORCHORI:
Wash, peel and cut the potatoes in small cubes.
Heat oil in a wok. Add asafoetida, nigella seeds and slited green chillies in it. Saute for few seconds.
Add potato cubes in it. Keep frying till potatoes turn into golden colour.
Add turmeric powder, roasted cumin-coriander powder, a pinch of red chilli powder and salt in it. Mix thoroughly.
Add 2 cups warm water in it. Mix well. Cook it on high flame till it starts to boil. Reduce the heat now, cover and cook till potatoes are well cooked. Add sugar in it. It must be a dry curry, so need not any gravy in it. Turn off the heat now. Sprinkle roasted cumin and coriander powder on the top. Serve warm with hot 'phulko phulko' (puffed) luchi.

HOW TO MAKE 'PHULKO' LUCHI:
In a large bowl, add APF, salt, 3 tbsps oil. Mix nicely. Make a dough by using little lukewarm water. Knead it nicely to make a very smooth dough. Smear with few drops of oil and cover with a damp cloth, set it for 30 minutes.
after 30 minutes, knead the dough once again, and make 20 equal balls from it.
Grease each ball with a drop of oil. Flatten each and roll into a disc of aprx. 4"-5" diameter.
Heat oil to deep fry in a wok. When oil is enough hot, fry one luchi at a time. Press the luchi a little with a spatula to make them puffed perfectly, gently flip it to the other side. Each luchi will take 20-30 seconds to fry. Drain on paper towel to absorb excess oil from it.

Immediately serve hot 'Luchis' with 'Aloo Chorchori' and enjoy this popular and traditional Bangali delicacy!


NOTE: For making white luchi, use wheat flour/maida, but not All Purpose Flour. You may mix atta flour for healthier option.

AAM RAS WITH POORIS

It's better not to say anything about aam ras. Litterally 'aam ras' means mango juice. It is more than a juice, a luscious, gorgeous, sweet and tasty mango delicacy, goes well with pooris.

INGREDIENTS:
2 Cups Mango Pulp (Alphonso)
1/2 Cup Sugar or as per sweetness of mango
1/2 Cup Milk
1/4 tsp Cardamom Powder
A Pinch of Saffron (optional)


METHOD:
Combine mango pulp, sugar, saffron, cardamom powder and milk in a jar. Blend all together for 60 to 90 seconds.

Pour in Serving bowls, keep in refrigerator for 1-2 hours before serving. Served chilled with warm pooris.
